Quick Eats


Some purple yams in China. Wouldn't they make a great yam/marshmallow dish at Thanksgiving? Beautiful!

Here's another quick one I've discovered. I've timed it, and found that by the time you start pre-heating your oven, to the time they come out, it's only 15 minutes for these brownie bites!

1. Grease up (I love butter flavored crisco, if you use crisco) the insides of a mini muffin pan.
2. Make your brownie box by the directions. I usually fill mine up to the brim. Then they come out flat on top.
3. Cook at about 325 for what, like, hmm, 8-10 minutes? If that. I don't know what the exact time would be in a US oven. We don't even have the same dials here. I'm just guessing that "6" means 350 degrees? Anyway, poke in a toothpick and when it comes out clean, they are done.
4. Let them sit in the pan for one minute, then use a toothpick to help poke between the brownie and the pan to get them out.

They are soooo good. I bet they'd be fun to eat when the middles are gooey, under ice cream. It's something quick the kids can help with for last minute guests.
